The name describes it accurately. Coconut milk is set with a gelling agent, chilled, and cut into cubes, so what you get is a soft set that yields immediately rather than the springy resistance of tapioca. It breaks apart on the tongue instead of needing to be chewed.
That texture is what makes it work across the whole menu. Tapioca pearls belong in milk drinks and get lost in fruit tea. Coconut jelly holds up in both, because coconut sits happily against dairy and against tropical fruit, and neither one buries it.

- More agar makes a firmer cube. 5g per 500ml of liquid is the soft set used here.
