Tips
- Ruby red only. White grapefruit is far more bitter and reads harsh in a sweet drink.
- Every scrap of pith has to go. That is where the bitterness lives.
- A pinch of salt does more for grapefruit than a spoon of sugar.
Variations
- Use pomelo instead, which is milder and holds larger sacs.
- Add a strip of zest to the syrup for more aroma without more bitterness.
- Mix with orange segments to soften the acid.
